Jodhpuri Koftas

Here is my Fauve recipe of Jodhpuri Kofta

Ingredients

Kand (jamicand, surang) – 100gms
Beet root – 2small or 1big
Potato (boiled) – 3 medium size
Ginger, greenchilli paste- 1sp
Spring onion – 1 bunch
Salt to taste
Oil for frying

First cut the kand into small pieces and deep fry them.
Then cut beetroot into small pieces and deep fry them also.
After fried kand and beetroot cool grind them into a paste in mixer.
Then mix with boiled and mashed potato.
Add Ginger, greenchilli paste, finely chopped Spring onion.
Mix well and add tadka – heat 1sp oil, add mustard seeds, jeera, and heeng and once it splutters add it to the above mixture.
Add salt finely and mix well.
Then make round balls and dip in besan paste (gram flour paste made of Gram flour/besan, red chilli powder, jeera, salt, and mix with water, consistency should be that of idly batter) and deep fry.
Serve hot with Tomato ketchup or pudina chutney.
